Truffles the Way Mary Made Them

Ingredients:
1 lb. dark chocolate, (Mary never used milk chocolate, though some do)
1 cup heavy cream
1/4 tsp vanilla extract
Maraschino Cherries
Cocoa Powder or Confectioner's Sugar, for rolling

Procedure:
1) Chop the chocolate into small shavings, and place in medium bowl.
2) Pour cream into small saucepan and add vanilla. Heat until hot and boiling slightly, then pour over chocolate. Mix with rubber spatula to combine.
3) Refrigerate for 1 to 1.5 hours until workable.
4) Scoop out about a tablespoon of chocolate mixture and form (by hand) around a maraschino cherry into small, bite-size balls. Roll in cocoa or confectioner's sugar to coat. Some people omit the cherry, but Mary never did! Makes about 18-20 truffles.
